A soft tender smooth textured cheese with a brine and ferment washed rind to give a lovely orange colour. The cheese has a wonderful soft, crumbly texture and its earthy and rich flavours literally cascade on the palate with a definite wild fruitiness. The farms are situated in the arid mountainous areas of the island, where animals graze on the abundance of fragrant maquis bushes and wild flowers covering the area – we defy you not to taste the wilds of Corsica in this cheese!
