One of the finest cheeses from the Basque country, with a distinctive bright ochre rind. Aged for a minimum of 90 days we often mature it longer which brings out its full spectrum of rich, buttery flavours with notes of nuts and wild herbs. Locally Ossau Iraty is often enjoyed with black cherry jam from the surrounding orchards and is also wonderful with Irouleguy wine, another one of the delights of the Pyrenees.
