Ewe's Milk Cheese

Sheeps milk tends to be very concentrated and tangy with a higher percentage of fat than cow's milk. This makes the cheeses rich and creamy with a delicious tangy nuttiness. The french call their sheep's milk cheeses "Brebis" and have fabulous variation of styles from creamy young Perail to the matured nutty Abbaye de Belloc and not forgetting the world famous blue Roquefort.
