Cow's Milk - Soft & Semi-Soft Cheese

Many of france's soft cheeses are either Bloomy rinded cheeses or Washed Rind cheeses. Brie de Meaux is the most famous of france's bloomy rinded cheeses but has many similar cousins such as the richer Brie de Melun or the nuttier Coulommiers. These cheeses get softer, creamier and more voluptous as they mature and age from the outside in.  Rind washed cheeses such as the Langres, Reblochon or Epoisses tend to be stickier and aromatic with a deep orange colour, though they often have a milder flavour than the aroma suggests.
