Another Swiss cheese, Tête de Moine (Monk’s Head) was discovered by French soldiers hunting for monks during the Revolution. When they found a huge stock of these cheeses, they compared the shape to the hair cut of the monks, and gave it its modern name. Tête de Moine is extremely perfumed with herbal notes and ideally should be served in thin slivers to deliver all its flavours.
